Newsletter #7 - October 2025

Welcome to our first newsletter of the of the 2025-2026 school year!

Since you least heard from us, we’ve worked with a lot of you to make REAL, tangible impacts on our community.

  • We partnered with Encinitas Bike Walk to provide a community bike ride.

  • We showed up for our immigrant neighbors at Encinitas City Hall, and helped raise close to $50,000 for an EUSD family impacted by immigration enforcement.

  • We continued to recap School Board meetings so you can stay in the loop even if you can’t make it out on a Tuesday night (watch the August and September recaps if you missed them!).

The future is local!

Kids Say the Truest Things

What’s your favorite thing about fall?

  • “I like when the leaves change color because it’s really pretty. I like when they fall to the ground and they go into other plants.”  –PEC Kindergartener

  • “There’s a fall festival. And we get to play after school, and we get to play a lot. And there’s a bunch of slides and inflatables.” –Capri 1st Grader

  • “Halloween because you get a lot of candy. But the corn syrup I don’t like about it, it’s worse than sugar. And I don’t like palm oil because they have to cut down trees in Borneo.”  –PEC 3rd Grader

  • “I like Halloween and being able to carve pumpkins and the fruits that are in season. Like, there’s pumpkins, there’s kiwis, there’s apples.” –PDL 3rd Grader

What’s the best hot lunch at school this year?

  • “The best hot lunch I had this year was when it was yogurt and granola with a popsicle. I really like the popsicles.”  –PEC Kindergartener

  • “The fiesta nachos. They’re grassfed beef, cheese and chips.” –PEC 3rd Grader

  • “The sub sandwiches. I just really like the toppings they put inside of them. They use turkey, which they don’t usually use in school lunches.” –PDL 3rd Grader

Anything about this school year that has surprised you?

  • “What I didn’t think was going to happen was that there was going to be a substitute teacher two days ago.” –PEC Kindergartener

  • "Costume dress up.” –Capri 1st Grader

  • “My teacher, she has ozobots. And she likes having parties in class. And the cardboard challenge. –PEC 3rd Grader.
